WILD CAUGHT SOCKEYE SALMON


A very simple recipe - such a delicious and healthy dish.  Place a whole side of salmon on a generous bed of fresh dill and slices of lemon, skin down.  Drizzle the top with olive oil, squeeze of half a lemon, cracked pepper and a little ground pink Himalayan Sea Salt (it's all I use), plus a little chopped fresh dill.  Bake in a 375F oven for 15 mins.  I also love this done on the outside grill on a cedar plank that has been soaked overnight in water, hot grill that is closed, also for 15-20 mins.  Serve with a green salad, your favorite rice or potato dish.
